Directions: |
Heat
oil in a 12 inch skillet (or deep fryer) about 2 inch
deep.
In a small bowl combine flour, xanthan gum, cinnamon,
and sugar, set aside. In a separate bowl whip egg and
milk. Add dry ingredients all at once, mixing with a
whisk. Batter should be the consistency of thin pancake
batter.
Poor batter slowly, using a small measuring cup, into
hot oil in a lace work type pattern. Fry for about 10
seconds then turn and fry for another 10 seconds or
until lightly golden brown. Place on a paper towel to
cool. Sprinkle with powdered sugar and enjoy. They are
also good with jam or syrup. Makes two 10 inch funnel
cakes.
(For onion rings, omit cinnamon and sugar. Be
sure oil is hot. Slice one medium onion into rings,
dip in batter and fry till golden brown.)

Directions: |
Heat
oven to 350°. Whip margarine, shortening, egg and
vanilla, then mix in sugars. Stir in remaining ingredients.
Drop
dough by rounded teaspoonfuls about 2 inches apart onto
ungreased cookie sheet. Bake until light brown, 9 to
10 minutes. Cool slightly before removing from cookie
sheet.
